Diadromous fish are known for their migratory behavior between fresh and sea water. Their body systems are adapted to live in both fresh and salty waters. Key examples of fishes in this category are shad, lampreys, eels, and salmon. Lastly, freshwater fishes inhabit fresh water sources such as ponds, lakes, and rivers. Examples include catfish, trout, carp, and tilapia. They are used more in fish farming in USA. Infact, a large proportion of freshwater fishes consumed in US are reared on farms.
Shellfish on the other hand comprises of crustaceans, echinoderms, and molluscs. Molluscs lack hard protective structures found in crustaceans and their bodies are not segmented. They only have calcareous shells which protect them. The shell grows as the organism grows. This category has bivalves, gastropods, and cephalopods as main subgroups. Cephalopods lack protective shells.
Chitin forms the building blocks in the protective shell found in crustaceans. After cooking, the shell color changes to pink or reddish. Crustaceans inhabit the ocean at different depths. Some species live near the surface while others live at the bottom of the ocean. Most known sub-groups in this class include lobsters, krill, crabs, and shrimps. There are different varieties under the sub-groups named.
Methods of preparation for these organisms are very many including broiling, smoking, steaming, baking, roasting, frying, and grilling.
